How to cook pork shoulder

​Take your pork shoulder joint out of the fridge an hour before you wish to begin cooking to allow it to come up to room temperature. Your pork shoulder will arrive with the skin already scored so rub plenty of salt in to the skin being sure to get in to all the hard to reach places. Place skin side up in a pre heated oven at 220 degrees centigrade for 30 minutes. Once the crackling has puffed up turn down to 170 degrees centigrade and cook for a further 2 hours 15 minutes per kg.
